Lemony-colored and delicate, petite golden lentils have a sweet flavor and smooth texture. Combine with pungent Indian spices for a delicious vegetarian meal with steamed rice or use as a side dish to meat.
Petite Golden Lentils are the tiny, lens shaped seed of a small shrub. Petite Golden Lentils are richly gold in color with a mild, earthy flavor and soft texture. Petite Golden Lentils are smaller and more round in shape compared to other types of lentils.
This quick cooking lentil is about ½ cm. wide. When cooked they hold their shape and since they are mild in flavor they do well with more assertive flavorings. Used in vegetarian cooking as a meat substitute, these tiny lentils are low in fat and high in protein and fiber. A staple food for many South Asian cultures, lentils have been eaten for over 8000 years and originated in Southwestern Asia along the Indus River.  There is no need to soak lentils.
Suggested use:
Quick cooking and versatile, Petite Golden Lentils are an obvious choice for winter soups, salads, curries, pilafs, stuffing and stir-fry.  Mix with breadcrumbs and use to stuff vegetables or blend with couscous and use as a bed for grilled seafood or poultry.  Toss cooked and chilled Petite Golden Lentils and diced roasted vegetables with a little olive oil and season to taste.
