This rare heirloom bean has survived many hardships. It is half-white and half-black with distinctive sharp boundaries that curve around the bean. Blends well with fresh corn.
Mild in flavor, the Calypso bean is a dried heirloom bean that is a member of the kidney bean family of legumes. When cooked, the Calypso Bean typically retains it's distinctive spotted pattern and shape. It is a variety of bean that may be referred to as a Ying Yang or Ying Yan Bean because its appearance resembles the Chinese symbol for harmony, known as Yin and Yang. Another name often used for this bean is the Orca bean. When prepared, the Calypso Bean can be added to soups, stews, casseroles, pasta, rice, and mixed vegetables.
They are smoothly textured with a good mild flavour and are great for baked dishes and stews and can add visual appeal to almost any recipe or salad.
It is a dwarf Bush Bean to 15" high, producing compact and high yielding plants, the beans can be harvested as green beans when very young and tender like French beans, or they can be left on the plant until the pods are dry.
These can then be shelled to reveal the quite fascinating beans that can be dried.
One of the all time best for baking and soups. Will retain color if cooked in plenty of water. Doubles in size when cooked.
