This lentil has been grown in France for years and is just now becoming grown in the United States. This is one of the smallest of the lentil family. Black Beluga Lentils look like caviar, cook quickly, and are higher in amino acids than French, green, or red lentils. These tiny lentils are indigenous to Syria. Their mild flavor combines readily with other ingredients in soups and grain salads. Timeless Food introduced organic Black Beluga Lentil in 1994. It was originally named by one of our favorite customers for its resemblance to caviar, and indeed has caught the attention of chefs the world over. This little black beauty is rich is flavor and deeply satisfying, and is the highest protein of any lentil have been ever found. This little jewel is a great choice for dramatic side dishes, pilafs, and as a bed for fish. While some beans tend to lose their beautiful coloration during cooking, the Black Beluga Lentils manage to keep their satin-black color. Their mild flavor combines perfectly with numerous ingredients in soups, salads, as well as providing higher levels of protein compared with other beans.
